Mushroom cacao is whole cacao paste melted into hot water with a functional mushroom extract powder stirred in, usually lion's mane, reishi, or cordyceps. Cacao is close to an ideal carrier for these powders: it is bitter enough to cover their earthiness, and it contains fat, which matters for the compounds in mushroom extracts that are fat soluble. One cup takes five minutes.
What mushroom cacao actually is
The mushrooms here are not culinary mushrooms and not psilocybin. They are extract powders made from fungi used in traditional medicine, most often lion's mane (Hericium erinaceus), reishi (Ganoderma lucidum), cordyceps, and chaga.
The cacao half should be whole cacao paste rather than cacao powder, and the reason is practical rather than purist. Cacao powder has had roughly three quarters of its cacao butter pressed out, leaving it around 10 to 15 percent fat. Whole paste sits at 50 to 55 percent cacao butter. Mushroom extracts contain both water soluble compounds (beta-glucans) and fat soluble ones (triterpenes, which are what reishi is largely valued for), so a drink carrying real fat gives the fat soluble fraction something to dissolve into. Cacao paste brings that fat with it.
The flavor argument is simpler. Reishi in particular is genuinely bitter, and dark cacao hides it better than anything else you are likely to have in the kitchen.
What the evidence does and does not say
Being straight about this matters more than selling it. Functional mushrooms are an active research area with some promising early human trials, but the evidence base is much thinner than the marketing suggests. Most studies are small, short, and use isolated extracts at doses well above what a teaspoon in a drink provides. The National Center for Complementary and Integrative Health notes that research on reishi in people remains limited and that evidence for its commonly claimed benefits is not established.
The cacao side has somewhat better support. A Cochrane review of 40 treatment comparisons found a small but statistically significant blood pressure lowering effect from flavanol rich cocoa (Ried et al., Cochrane Database of Systematic Reviews, 2017), though a large three year trial of cocoa extract found no benefit for cognition (Baker et al., Alzheimer's & Dementia, 2023).
So: drink this because it tastes good and makes a pleasant morning ritual. Treat specific health claims about it with skepticism, and talk to a clinician before adding mushroom extracts if you take medication, are pregnant or nursing, or have an autoimmune condition. Reishi in particular may interact with blood thinners.
Ingredients
Makes 1 mug, about 10 ounces
- 30 g whole cacao paste, shaved into small pieces
- 60 ml (1/4 cup) hot water for melting, plus 180 ml (3/4 cup) hot water or milk
- 1 to 2 g mushroom extract powder, typically 1/2 to 1 tsp. Follow the dose on your product, not this recipe
- 1 pinch fine sea salt
- 1/2 tsp ground cinnamon, optional and recommended
- 1 tsp maple syrup or honey, to taste
- Optional: 1/4 tsp vanilla extract, or a small pinch of black pepper
Look for an extract rather than plain ground mushroom, and check the label states the fruiting body rather than mycelium on grain, since the latter is largely the growing substrate.
Method
- Melt the cacao first. Combine the cacao pieces with the 60 ml of hot water. Wait a minute, then stir to a smooth, glossy base with no lumps.
- Add the powders to the concentrate. Stir the mushroom powder, salt, and cinnamon into the thick base. Mushroom extracts clump badly in a full mug of liquid and disperse easily here. This ordering matters more for this recipe than any other.
- Add the rest of the liquid slowly while stirring.
- Blend or froth for 15 to 20 seconds. This both smooths the texture and helps suspend the extract.
- Sweeten to taste and finish with vanilla if using.
Tips and variations
- Match the mushroom to the time of day. Lion's mane and cordyceps are generally taken in the morning, reishi in the evening, which is the conventional usage rather than a claim about what they do.
- Start at half dose. Mushroom extracts can be noticeably bitter and some people find them hard on an empty stomach. Begin with half a teaspoon.
- Cinnamon is not optional in practice. It covers the earthy note better than anything else and lets you use less sweetener.
- Add fat if your mushroom powder is harsh. A teaspoon of coconut oil or a splash of oat milk softens it, and the extra fat may help with the fat soluble fraction.
- Skip the mushroom entirely on days you want to taste the cacao. The base recipe is good on its own.
Common questions
Does mushroom cacao have caffeine?
Very little, and none from the mushrooms. Cacao's dominant stimulant is theobromine, a milder relative of caffeine that is fat soluble, peaks two to three hours in, and clears more slowly (Baggott et al., Psychopharmacology, 2013). This is why mushroom cacao is often suggested as a coffee replacement.
Can I drink this every day?
Cacao daily is fine for most people. For mushroom extracts, follow the dosing on the product and check with a clinician if you take medication or have an autoimmune condition. Some traditions cycle them with breaks, though there is no strong evidence that cycling is necessary.
Why does my mushroom powder clump?
Because it went into too much liquid at once. Stir it into the thick melted cacao base before adding the rest, and the problem disappears.
Is this the same as mushroom coffee?
No. Mushroom coffee is instant coffee with extract added, so it carries coffee's caffeine. This has cacao instead, which means theobromine rather than a caffeine hit, and a slower, flatter curve.
