Wolf Moon is one of the most loved bakeries in the region, with two homes, one in Naples and one in Bonita Springs. It is known for French croissants made with real patience, small-roaster coffee, and a short menu that changes with what is fresh. Behind all of it is Clara, an Argentine master baker whose whole approach is to do a few things and do them perfectly. She also pours our ceremonial cacao at both cafes, which we will get to, but this one is about Wolf Moon.
Who is Clara Fasciglione

Clara grew up in Argentina, in the tiny mountain village of Villa Traful, working alongside her mother in the family restaurant. That early apprenticeship, learning to cook and bake for a community rather than a crowd, shaped everything that came later. Before she left Argentina she ran a wholesale and catering bakery and an artisanal foods delivery service, so the discipline of small-batch, made-to-order craft was already in her hands (Gulfshore Life).
She moved to the United States, first to Michigan and then to Naples during the pandemic. Looking for a way to build community in a new place, she started making medialunas, the Argentinian take on the croissant. Word spread quickly, and a following formed around her baking before she ever had a storefront (Gulfshore Life).

From a full moon to two bakeries
The name is not decoration. In January 2022, on the night of the first full moon of the year, the one traditionally called the wolf moon, Clara opened Wolf Moon for business. She baked out of a commercial kitchen in North Naples and fulfilled online orders for individuals and local coffee shops, croissants filled with dulce de leche or finished with parmesan, sold one full moon at a time (SWFL.Life).

Demand kept climbing, and it became clear the baked goods had a permanent place in Southwest Florida. Wolf Moon opened its brick-and-mortar bakery in downtown Bonita Springs, in the Entrada plaza, with a laboratory-style open kitchen so guests can watch the bakers work, a handful of French cafe tables, and small-roaster specialty coffee. Clara even worked with small roasters to develop a house roast just for Wolf Moon (SWFL.Life). The menu stays deliberately short. She believes in offering a limited number of items made expertly, from an oversized double-chocolate pain au chocolat to French croissants of every variety (Gulfshore Life).

The croissants are the reason to come. Flaky, deeply laminated, and made to order, they run from the classic butter croissant to that oversized double-chocolate pain au chocolat, with dulce de leche and almond options that nod to Clara's roots.
